The most loved, balsamic vinegar of our family. This product comes from the head barrels of each of our batteries, where the flavour is most concentrated and the vinegar most dense. This product makes a great gift, a true symbol of Italian lifestyle and Modena traditions.
This is our chef d’oeuvre, the finest product, which receives the highest certification by the Balsamic Vinegar Consortium of Modena for its organoleptic qualities. It is extracted from the smallest and most curated of our barrel batteries, where flavour is most intense and the complexity of the vinegar is best expressed and concentrated. All vinegar of this collection has gone through a minimum of 25 years in the making.

With the end of the Second World War the Arletti Family moved into the city of Modena, bringing with them the traditions and flavours of the countryside with them. Starting from scratch, the Arletti family started started producing hand-made prime quality butter to the city’s restaurants at Mercato Albinelli, the oldest and most important market of the city. As business expanded, the family quickly developed an interested for the most respected object of the dinner tables of Modena: Traditional Balsamic Vinegar. Soon enough, grandad Franco was in the library, reading all he could find on the subject. He found a great partner in the young Alessandro, deeply interested in vinegar, wine and the Italian culinary savoir fare. Together they cultivated the Traditional Balsamic barrel batteries which to this day produce the fine vinegar. The recipe of the Arletti family Traditional Balsamic Vinegar is still the same: a fine balancing wine must varieties, passed along the generations.
What’s inside a bottle of Traditional Balsamic Vinegar? Not much, really, a part from grape wine must and time. A lot of time. In order to be certified as Traditional Balsamic Vinegar of Modena, the substance needs to be comprised by 100% pure grape wine and be at least 12 years old. For the most refined variety, the “extravecchio”, at least 25 years are necessary. The product we sell is older than that, at least, with at least 30 years in the working. Balsamic Vinegar can only improve in time, and tue to its particular chemical composition, does not expire. Chemists and industrialists, both from Modena and elsewhere, have tried formulas to speed up the refinement process artificially, in vain. There is no other way to obtain the vinegar expect from the wisening and constant work of time.
We are located in Modena, Via Biagi 73, 41123. Vinegar barrels are traditionally located in the house’s “mansarda” or well ventilated attic, so that the vinegar can be best exposed to the high temperature excursion between summer and winter, guaranteeing the product’s typical clarity and density. Our vinegar follows this tradition, therefore our barrels are located on the third floor’s attic of our house. We inform our visitors that there is no elevator.
