Sampling for Analysis and Young Promises

As we do every year, we have collected samples of vinegar from each of our barrels to be analyzed at a specialized laboratory. The analyses will provide us with acidity and density values for each barrel, allowing us to better redistribute the product to balance these values within an optimal range during the topping-up process.

This year, our vinegar cellar welcomes eight new barrels, divided into two series, U and V! These barrels have a unique backstory: they were saved “by the skin of their teeth,” quite literally rescued from the roadside where they had been abandoned by another local vinegar producer who was about to discard them.

The barrels were still structurally sound, though generally in poor condition. We managed to clean them, have them repaired by a cooper, and breathe new life into them in our vinegar cellar! Since these barrels are so young, we’re a bit anxious about whether the product will mature properly. On this note, the analyses will let us know if everything is on track. We’re all eagerly awaiting the results!
