The topping-up process is not only necessary to keep the progression of the vinegar batteries going, replacing the vinegar that has evaporated over the previous year, but it is also a perfect opportunity to spend some time among the barrels, to come into direct contact with the product and the equipment, to make small repairs, note any damages, improvements, etc.<\/p><p>During each topping-up session, we move several hundred liters of vinegar, both by removing the overly dense vinegar and by transferring the vinegar between barrels according to the results of our analyses. The example graph shows the acidity levels for one of our vinegar batteries. The darker solid line represents the most recent year, while the other lines indicate the values from previous years. As you can see, year after year, through the topping-up process, we adjust and smooth out the more extreme values of the battery, gradually.
